- Fresh Chilli & Garlic Sauce Omelette is a quick and easy dinner for one and perfect for midweek meals or meat free Monday.
- 150g chestnut mushrooms, sliced
- 2 spring onions, chopped
- 1tbsp Fresh Garlic & Chilli Sauce
- 3 eggs, beaten
- 50g cheddar, grated
- Handful of rocket
Heat a tablespoon of butter in a frying pan and cook the mushrooms until soft. Add the spring onion and cook for another 3-4 minutes. Decant into a bowl. Cover to keep warm.
Heat another tablespoon of butter in the frying pan and pour in the eggs. Cook gently, drawing in the sides of the omelette, letting the uncooked egg run into the gaps. When almost set, sprinkle over the cheese, spoon over the mushroom mix and drizzle over the Fresh Chilli & Garlic Sauce.
Leave for a couple of minutes until the cheese starts to melt then add the rocket and flip over one half. Slide onto a plate.
