- This Pesto Chicken Calzone is fun, portable and super tasty – an easy family friendly dinner.
- 6tbp Cottage Delight Authentic Basil Pesto
- Olive oil to spray
- 1 brown onion, thinly sliced
- 400g chicken mince
- 2 x 250g pizza dough
- 200g grated cheese
Preheat the oven to 220°C/Fan 200°C/Gas Mark 7. Line a large baking tray with baking paper.
Heat oil in a large frying pan over medium-high heat. Add onion, stir and cook until soft, around 2 minutes. Add mince, cook until brown, around 5 minutes. Add pesto and stir occasionally, for 2 minutes.
Divide dough into 4 equal portions. Roll 1 portion into a 20cm round. Place ¼ of the grated cheese and ¼ of the chicken mixture on one half of the round. Fold over the dough to cover the mixture. Pinch edges to enclose. Place on prepared tray. Repeat with remaining dough portions and chicken mixture. Spray with oil. Bake for 10 minutes or until golden brown.
