Salmon and Wasabi Noodle Soup

This aromatic soup is delicious any day of the week. A real comforter if you are feeling under the weather, great as a one-pot supper dish and even glamourous enough to impress your dinner guests.

 

Ingredients

  • 1 litre vegetable or light chicken stock
  • 200g dried noodles
  • Half a bottle Cottage Delight Wasabi Teryaki Noodle Sauce
  • 1 long red chilli, finely chopped
  • 3 spring onions, finely chopped
  • 4 small salmon fillets
  • Coriander to garnish

Method

  1. Bring the stock to a boil in a large saucepan, gently lower the salmon fillets into the stock and simmer for 2 minutes. Add most of the chilli and spring onions, leaving a little to one side to garnish at the end. Then simmer for a further 3 minutes, until the salmon is firm to touch.
  2. Carefully remove the salmon fillets and place to one side and keep warm. Stir in the Cottage Delight Wasabi Teryaki Noodle Sauce and add the noodles to the saucepan. Return the salmon fillets to the stock and season the soup to taste with a little salt or soy sauce. Simmer for a further minute to ensure all ingredients are warmed through.
  3. Serve in bowls with the salmon fillets sitting on top, and garnish with the remaining chopped spring onion, red chilli and a little fresh coriander.
  4. Chef’s tips: Create a vegetarian alternative by substituting the salmon with asparagus or sliced peppers, and add a handful of fresh beansprouts.
