Indian Spiced Tiger Prawn Curry
We have created a deliciously aromatic and spicy curry. Simply increase or decrease the amount of marinade according to how hot you like your curry sauce.
Ingredients
- 400ml coconut milk
- 4 tablespoons Cottage Delight Indian Spiced Marinade
- 200g raw tiger prawns
- 1 bunch of spring onions
- 12 cherry vine tomatoes
- chopped fresh coriander, to garnish
Method
- Marinate the prawns in the Cottage Delight Indian Spiced Marinade for a minimum of 2 hours in the refrigerator, in a non-metallic dish, turning occasionally.
- In a frying pan heat the coconut milk until it is reduced by half.
- Finely chop the spring onions and halve the cherry tomatoes and add the coconut milk, cook for 1 minute until soft.
- Finally add the prawns with the marinade and cook for 2-3 minutes until the prawns turn pink. Add chopped coriander just before serving.
- Serve with plain basmati rice and wilted spinach.
