Indian Spiced Tiger Prawn Curry

We have created a deliciously aromatic and spicy curry. Simply increase or decrease the amount of marinade according to how hot you like your curry sauce.

Method

  1. Marinate the prawns in the Cottage Delight Indian Spiced Marinade for a minimum of 2 hours in the refrigerator, in a non-metallic dish, turning occasionally.
  2. In a frying pan heat the coconut milk until it is reduced by half.
  3. Finely chop the spring onions and halve the cherry tomatoes and add the coconut milk, cook for 1 minute until soft.
  4. Finally add the prawns with the marinade and cook for 2-3 minutes until the prawns turn pink. Add chopped coriander just before serving.
  5. Serve with plain basmati rice and wilted spinach.
