Grilled Vegetable and Feta Skewers with Mediterranean Couscous
Ingredients
- 225g feta cheese, cubed
- 8 small open cup mushrooms
- 1 red pepper, cut into chunks
- 1 courgette, sliced
- 1 packet Cottage Delight Mediterranean Couscous
Method
- Pre-soak 4 wooden skewers in water.
- Season and oil indgredients.
- Place ingredients alternatively on each skewer. Keep in the refrigerator until ready to barbecue.
- Chargrill slowly at side of barbecue.
- Follow instructions for Mediterranean Couscous and place onto a serving plate arranging skewers on top. Equally good drizzled with our Honey and Mustard Vinaigrette.
