Grilled Vegetable and Feta Skewers with Mediterranean Couscous

Method

  1. Pre-soak 4 wooden skewers in water.
  2. Season and oil indgredients.
  3. Place ingredients alternatively on each skewer. Keep in the refrigerator until ready to barbecue.
  4. Chargrill slowly at side of barbecue.
  5. Follow instructions for Mediterranean Couscous and place onto a serving plate arranging skewers on top. Equally good drizzled with our Honey and Mustard Vinaigrette.

Makes: 4 skewers
Preparation time: 10 minutes + marinating time - Cooking time: 15-20 minutes
