Cod with Coriander & Black Pepper Marinade and Thai Rice
Ingredients
- 2 x 175g cod or pollack fillets
- 100g Thai rice
- 1 lime
- 2tsp chopped coriander
- 100ml Cottage Delight Coriander and Black Pepper Marinade
Method
- Generously cover the fish with the Coriander and Black Pepper Marinade and leave in the refrigerator for a minimum of 30 minutes (overnight if possible).
- Grease a sheet of silver foil. Transfer fish and marinade on to the greased side of the foil and wrap to make a parcel.
- Place on edge of barbecue and cook for 20 minutes.
- Cook Thai rice as instructions, allow to cool then add squeezed lime juice and coriander. Reheat in microwave if desired.
- Serve the fish in the parcel with a selection of cooked vegetables.
