Cod with Coriander & Black Pepper Marinade and Thai Rice

Method

  1. Generously cover the fish with the Coriander and Black Pepper Marinade and leave in the refrigerator for a minimum of 30 minutes (overnight if possible).
  2. Grease a sheet of silver foil. Transfer fish and marinade on to the greased side of the foil and wrap to make a parcel.
  3. Place on edge of barbecue and cook for 20 minutes.
  4. Cook Thai rice as instructions, allow to cool then add squeezed lime juice and coriander. Reheat in microwave if desired.
  5. Serve the fish in the parcel with a selection of cooked vegetables.
