Cherries, Sherry and Almonds Mincemeat Doughnuts with Clotted Cream

Festive doughnuts – a dessert with a difference and a degree of Christmas cheer.

Ingredients

  • 8 very fresh slices of white bread
  • 50g unsalted butter
  • 100g Cottage Delight Mincemeat with Cherries, Sherry & Almonds
  • 100g self raising flour
  • 25g caster sugar
  • 150ml dry cider
  • 1 jar Cottage Delight Clotted Cream

Method

  1. Butter all the slices of bread.
  2. Place 4 slices, butter side up, on a clean work surface and spoon the Mincemeat with Cherries, Sherry & Almonds onto the centre of each slice.
  3. Top with remaining 4 slices, again butter side up and cut out doughnut rounds with a 7.5cm cutter.
  4. Mix together flour and sugar and add the cider slowly until the mixture becomes a thick batter.
  5. Dip the doughnut rounds into the batter mix and cook in hot fat for 2 minutes on either side or until golden brown.
  6. Remove from the pan onto kitchen paper and allow to cool for a minute.
  7. Serve warm with a dusting of icing sugar and Cottage Delight Clotted Cream.

Makes 4 doughnuts.
